The appetizer: Rock shrimp "lollipops" with spicy almond sauce.
The first course: Corn and Lemon Grass Soup with Lobster Salad.
The second course: Terrine of Foie Gras with Fresh Texas Fig and Lemon-Thyme Gastrique and Toasted Brioche
The fish course: Wild Alaskan Sockeye Salmon in Fig Leaves with Nasturtium Butter and Coconut Rice.
The entree: Five-spice Braised Beef Short Rib with Napa Cabbage-Orzo Stew.
The cheese course: Roquefort Trifle with French Butter Pear Relish.
For dessert: Cardamom Spice Cake with Orange Blossom Cream. The cake is accompanied by coffee and fleur du sel caramels.
The dessert buffet includes a hookah filled with scented tobacco.
