1. Asian food stalls
Oriental flavors and Asian ingredients have been popular additions to our menus, with live wok cooking stations and dishes from steamed dim sum to freshly prepared sushi. Favorites include white miso glazed prawns with furikake and grilled anticuchos skewers with amarillo chile chicken.
2. Marshmallow stations
These fluffy delights come in a variety of original flavors from fresh black currant to pistachio with edible glitter and popping candy. Excellent when toasted over a flame and dunked in melted chocolate or raspberry coulis.
3. Gourmet popcorn
Simple popcorn has taken on new heights as we experiment with unique flavors. Some of our favorites include beetroot and cardamon,and freshly grated truffle and Parmesan with dried prosciutto.
4. Neon pudding stalls
Glow-in-the-dark treats are vibrant and eye-catching in our neon dessert stations. Desserts include gin and tonic jelly, neon meringues, sparkling chocolate lollies, neon macaroons, raspberry ripple Eton mess with framboise, and lemon meringue pie with lemoncello pipetteto.
5. Liquid nitrogen
Liquid nitrogen is a great way to entertain your guests. We offer freshly made ice cream in a variety of flavors or frozen shots of green tea and lime or Campari mousse, creating a burst of flavor.
6. Cronuts
We continue to experiment with fillings and toppings to bring new varieties to the table. They make a perfect addition to our dessert stall and can be filled with anything from apple purée with a salted caramel topping to passion fruit cream with added sparkle and popping candy.
7. Dude food
The trend originated in the United States, with the street-food movement of food trucks selling quality street food. We have developed a 'dude food' menu including rock shrimp ‘hush puppies’, BBQ short rib roll with chipotle Béarnaise, and the king crab, pomelo and vanilla oil on liqorice sticks.
