Constellation Culinary Group also prepared the evening’s specialty cocktail, the Diamond Sea Fizz, a mix of gin, elderflower liqueur, lemon juice, edible flowers, and club soda.

The cocktail reception featured an oyster station, which was wrapped in a trendy customized bar facade.

Over 150 cultural philanthropists, civic leaders, and science supporters attended the fundraiser.

Delightful Dinner
The main portion of the event took place during dinner, where attendees enjoyed a themed menu, excellent programming, and wonderful company!
Seafood Sensation
The main course was fresh, net-caught Olive Oil Poached Grouper served with champagne caviar beurre blanc, chives, crushed potato galette, dehydrated orange and orange oil. The fish was covered in a “net” made of phyllo dough.
Lifelike Culinary Creations
For dessert, attendees savored the delectable and impressive “Sea Urchin,” a creamy urchin-shaped cheesecake topped with mango mousse and passion fruit sauce in a coral-inspired design.
An Educational Evening
During dinner, Frost Science President and CEO Dr. Doug Roberts welcomed the crowd. The programming focused on the importance of ocean science and conservation, inspiring attendees to give to the fundraiser's noble cause.
